The Sparkliest of Cocktails for Your Christmas Dinner!

It’s two days until Christmas (eve) and all I can think about is cracking open Christmas poppers, sporting the oh-so-chic paper crowns and indulging on the rack of lamb that will be marinating for over 24-hours. But before all that tabletop Christmas cheer, comes a fabulous Christmas cocktail, a festive and bubbly salute to the evening! 

If you’ve been busy planning the menu, trimming the tree AND the table, and you figured that you’d simply open a bottle of bubbly as your amuse-buche, STOP!

Here’s a super simple sparkling cocktail that screams Christmas! The best part about it is, it’s packed with antioxidants. Just when you need the extra kick of vitamins between the many servings of Christmas pudding. CHEERS! 

Pomegranate Fizz with Frosted Rosemary

Ingredients:

Pomegranate juice

Pomegranate seeds

Hard apple cider

Rosemary sprigs

White superfine sugar

 

With all decadent things come beautiful presentation. So, start with frosting the rosemary. I was inspired to do this because rosemary so closely resembles pine and I thought, how beautiful it would be if it were covered in snow!

Soak the rosemary sprigs in water.

Generously drizzle sugar onto the sprigs and let dry for about an hour. 

Once dry, pour about two tablespoons of pomegranate juice into a champange flute. 

Fill the rest of the glass with hard apple cider. You can also add a drop of vodka to really pack in the punch!

Sprinkle with pomegranate seeds and garnish with a sprig of frosted rosemary. 

The drink is sweet and tart – both the pomegranate juice and apple cider have a zesty element but combined are aromatic and just so delightful. If you add vodka the cocktail becomes even more pungent and I promise you, you won’t be able to put it down. AND, men love it too!! I promise!
