Cheers to being stuffed! 

Thanksgiving, apart from expressing gratitude for life’s countless blessings, is a day when your usual exercise for self control is put on hiatus, and a fourth piece of pumpkin pie is absolutely normal and extremely necessary! 

So, aside from gobbling (yes, pun intended) the heap of buttery mashed potatoes and spoonful’s of stuffing, here are a few fall-inspired unique appetizers that will leave your guests craving for your piece de resistance (gobble gobble)!

 

Pancetta Wrapped Dates

Ingredients:

Pancetta

Date

Pre-heat the oven to 325° F.

On a cookie sheet, fold a piece of pancetta in half and place a date in the center of the semi-circle.

Wrap the pancetta around the date, making sure the seam faces down.

Bake in the over for 20 minutes, or until the pancetta is cooked through. 


Crab Cake Croquettes

Ingredients:

½ pound of jumbo lump crab meat

½ red pepper, diced

2 tablespoons chives, chopped

1 egg

1 lemon wedge

½ cup breadcrumbs

½ teaspoon old bay seasoning

1 teaspoon Worcestershire sauce

Tabasco sauce, few dashes

Vegetable oil

Salt

Peppe

Dice and chop the pepper and chives.

Whisk the egg, old bay, Worcestershire, Tabasco and juice of one lemon wedge together.

Add the pepper and chives.

Mix in the crab meat and breadcrumbs.  Season with salt and pepper.

Form balls out of the mixture.

In a skillet heat up about ¼ cup of vegetable oil. Once hot, add the crab croquets and cook until brown. Flip over and cook on all sides.

Serve with tartar sauce. 

 

Sweet Potato Disks

Ingredients:

1 large sweet potato

Sour cream

Chives, chopped

Pancetta

Olive Oil

Salt and Peppe

Pre-heat the oven to 350° F.

Slice the sweet potatoes into thin disks and place on a baking sheet as a single layer.

Sprinkle with olive oil, salt and pepper.

Bake until the potato is cooked through.

Cook the pancetta until crispy and allow to cool.

Chip the chives thinly.

Once the potatoes are slightly cooled, add a small dollop of sour cream, small bits of the pancetta and the chives. 

 

Baked Brie with Strawberry Jam and Balsamic Reduction

Ingredients:

Brie

Strawberry jam

Balsamic reductio

Pre-heat the oven to 400° F.

Put the brie into a oven safe bowl and add a topping of the strawberry jam.

Cook for about 15-20 minutes or until the brie is oozing.

Remove from oven and drizzle some balsamic reduction. Serve with freshly baked French bread. 

Butternut Squash and Goat Cheese Crostini

Ingredients:
Fresh baguette

Goat cheese

Butternut squash

1 teaspoon tumeric

Sage leafs

Olive Oil

Salt and Peppe

Pre-heat the oven to 350° F.

Dice the butternut squash into small pieces and season with turmeric, salt and pepper. Put on a baking sheet and cook until tender.

Slice the French bread and place in the oven until toasted.

Spread a thin layer of goat cheese on top of the bread slices. Top with a spoonful of the butternut squash.

Garnish with one sage leaf. 

Set the table and serve!
